Busy, but have some ice cream
I'm super busy today so all I can offer you is this awesome article Lauren sent me on NYC's best Ice Cream Sandwiches. I've never been that into ice cream sandwiches, but this isn't your run-of-the-mill store bought stuff. These look incredible.
